WHAT DOES IT LOOK LIKE?

WHAT IS THE POINT OF HAVING A BALANCIER?

Because absinthe releases different aromatics at different levels of dilution, it is very important to gradually dilute absinthe, so as to release all of its aromatics. If you dilute absinthe too quickly, you will miss out on its aromatics.

Gradually diluting absinthe is hard to do manually and requires practice. For this task, the balancier is an indispensable tool. It was invented over a century ago to make gradual dilution of absinthe nearly effortless. The balancier is sometimes called the Cusenier “Auto Verseur” or see-saw, in reference to the Cusenier model used over a century ago.

HOW TO USE THE BALANCIER:

  • Set the balancier on top of a glass
  • If desired, place a sugar cube inside.
  • Pour iced water into the top
  • The iced water (and sugar, if you used a cube) will drip through an opening in the bottom of the balancier. It will fall onto the lever which will dispense the water into an even and gradual rate into the absinthe, resulting in a delicious absinthe with all of its aromatics expressed.
